A Blip in the Blog HEAD

Due to my recent head injury I've been forced to break from my blogging.  I'm suffering from weakness, fatigue and double vision, as well as distorted sounds, tastes and smells. With the help of a walker I hope to build up my strength.

Thank you for all my close family, friends and neighbors who have supported and prayed for me.  I appreciate all!

Please continue to peruse the recipes on my blog; views are now over 10,000.  Experiment with the ones that strike you, vegetarian, vegan OR pesco veg.  There is something for everyone!.

Help keep the blog running.  I will be back and it is with certainty that I assure you, I once again will be addressing the need for more nutritious hospital food.  Ugh!

A QUICK LIGHT LUNCH

Golden Berry Blend consists of golden raisins,
cherries, cranberries and blueberries.

This is one of my all time favorite lunches.  I add absolutely NO dressing, NOT necessary.

In a bowl mix one diced apple, about 1/4 cup of pistachios OR Planters mixed nuts and the same amount of the Golden Berry Blend (or raisins, or any other dried fruit).  Mix and eat.

This is so simple and so good.

MORE SWEET POTATOES

The home grown sweet potatoes are so truly delicious that I highly encourage everyone to start their crop come this spring.  Purchase a couple of sweet potatoes from your market, sprout them in a glass or jar of water and plant.  It's that easy!  Check the recommendations for your area.  They are harvested right before the first frost.  They cure for 2 weeks and then are stored in a cooler area (NOT the refrigerator) and will last for approximately 6 months.

oh so sweet, no need for butter OR salt, delicious
