This is a quick healthy 15 minute dinner, tops.  Use the seasonings of choice BUT I love my Penzey's spices and use a mixture called Fajita Seasoning...use liberally.

use seitan as your protein / "meat" in this easy, quick recipe

ready to be put into the warmed tortilla wraps


1 green pepper
1 large red onion
1 pkg. seitan strips
Fajita seasoning, generous
black pepper


In a small amount of oil, saute the onion in a bit of salt.  Add the green pepper strips, spice mixture, black pepper and continue to cook until just turning soft.  Add the seitan and more spice if desired.  Stir together till mixture is hot. 
Serve in a warmed tortilla shell with salsa, guacamole and / or coleslaw.
