Usually a good Mexican corn consists of the corn topped with mayonnaise and Parmesan cheese.  Today accompanying my Fish Tacos, I topped my fresh boiled corn with my favorite Mexican corn combo.  This is a great change from ORDINARY corn on the cob.

fresh corn, boiled
tofu mayo ( see previous blog)
vegan Parmesan
lime wedges
pepper, optional


clean corn and boil for 10 minutes, drain
serve:  spread the corn generously with tofu may, sprinkle with vegan Parmesan and squeeze on the fresh lime juice.  season with pepper if desired.
