Mexican corn shown with my infamous easy fish tacos
INGREDIENTS:
fresh corn, boiled
tofu mayo ( see previous blog)
vegan Parmesan
lime wedges
pepper, optional
DIRECTIONS:
clean corn and boil for 10 minutes, drain
serve: spread the corn generously with tofu may, sprinkle with vegan Parmesan and squeeze on the fresh lime juice. season with pepper if desired.
