VEGAN PARMESAN CHEESE

this is a vegan substitute for Parmesan cheese OR try the following recipe:



VEGAN PARMESAN CHEESE:

INGREDIENTS:

1/2 cup blanched almonds or white sesame seeds
2 Tbsp. nutritional yeast flakes
1 to 2 tsp. light or chickpea miso
heaping 1/4 tsp. salt

DIRECTIONS:

Pulverize almonds or seeds. 
Add the remaining ingredients and pulse till well mixed.
Store in an airtight container in the frig.
Keeps for 1 month or longer.  May be frozen.

Use on pasta, pizza etc.

variations:  You can also use raw pumpkin seeds, roasted pistachios, walnuts, pine nuts, sunflower seeds or any other nut or seed choice.

Thanks for your comment. Make a double batch, it doesn't yield a bunch. I love it in hot soup.
